Curry Chicken Salad


Ingredients

  • 4 Cooked skinless, boneless chicken halves
  • 1/2 Cup low-fat mayonnaise
  • 1 Tsp curry powder
  • 1/4 Tsp fresh ground pepper
  • 1/4 Cup celery, chopped
  • 1/2 Cup chopped red pepper
  • 1 Cup peeled & chopped apple
  • 1/2 Cup seedless grapes
  • 1/4 Cup roasted almonds

Directions

  1. In a medium bowl, chop chicken, combine with mayonnaise, curry, & pepper.
  2. Add apple, grapes, almonds, celery & bell pepper.
  3. Mix well until well coated.
