Antillean Fritters
Ingredients
- 1 envelope dry yeast
- 1/2 cup warm water
- 3 tbsp of sugar
- 4 cups flour
- 2 well beaten eggs
- 1/2 cups warm water
- 2 cups seedless raisins
- 3 apples, peeled and diced
- 1/2 tsp vanilla
- 1 tsp salt
- 1 cup of confectioner's sugar
Directions
- Put yeast and 3 tbsp of sugar in warm water and soak 10 minutes.
- Mix together yeast mixture, eggs, water, vanilla and salt, and add to flour slowly. Add fruit, let rise 1 1/2 hours. Drop in hot frying oil, dust with confectioners' Sugar.
