Moroccan Tagine with Carrots


Ingredients:

1 kg and ½ of meat cut into pieces
2 kg of carrots
3 soup spoonful of oil
1 crushed clove of garlic
1 coffee spoonful of ginger, safran
2 coffee spoonful of salt
the bark of a preserved lemon
juice of half a lemon
olives
3 soup spoonful of crushed parsley


Preparation:

Peel the carrots, remove their inside, cut them into little pieces(4 to 5 cm long);put meat in ap pressure cooker with oil garlic, ginger, safran and salt, add water and close the cooker, leave it cook for ½ hour, add carrots, salt, sprinkle with parsley, cover and cook
