Jalapeno Egg Pie


Ingredients:
6-8 eggs (beaten)
1 lb. Sharp Cheddar cheese or Swiss, shredded
1/4 cup drained, chopped pimentos or tomatoes
2-3 jalapeno peppers, seeded & chopped

Directions:
Mix all ingredients and pour into a 9" of 10" greased pie plate. Bake @350degrees for 30 mts. or until firm. Cool before cutting. For a hotter pie, add more jalapeno peppers or hot salsa.
